Good recipe for French Silk Pie?
I did a search for recipes and tried a few, but ended with the same problem every time … The taste is good, but the sugar does not dissolve so the end result is a very grainy, filled with sugar. Does anyone have a good silk pie recipe French has no grain? Thanks!
1 cup whipping cream 1 (6 ounce) package semi-sweet chocolate 1 / 3 cup butter 1 / 3 cup granulated sugar 2 beaten egg yolks 3 tablespoons crème de cacao or whipping cream 1 baked – or 9-inch pastry shell Whipped cream 8 (optional) Chocolate curls or miniature chocolate pieces (optional) In a 2-quart saucepan combine 1 cup whipping cream, chocolate chips, butter and sugar. Simmer, stirring constantly, until chocolate melts. This should take approximately 10 minutes. Remove pan from heat. Gradually stir about half of hot mixture into beaten egg yolks. Place the egg mixture to pan. Cook over medium-low heat, stirring constantly, until mixture is slightly thickened and bubbly around. This should take 3 to 5 minutes. Remove pan from heat. (The mixture may seem separately.) Add the Cocoa Butter or cream. Place saucepan in bowl of ice water and stir occasionally until the mixture hardens and it becomes difficult to remove (20 minutes). Transfer chocolate mixture to medium bowl. Beat the cooled chocolate mixture with electric mixer on medium to high speed 2 to 3 minutes or until light and fluffy. Spread a layer of filling in baked pastry. Cover and chill pie about 5 hours or until set, or up to 24 hours. At the time serving, top each serving with whipped cream and sprinkle with chocolate curls or pieces, if desired
